This easy Lamb Rogan Josh tastes like your favorite Indian restaurant curry but it’s totally doable on a weeknight. We’re talking fall-apart lamb in a deep, brick-red tomato gravy colored with Kashmiri chili, finished with cooling yogurt.
Make it on the stovetop, in the slow cooker or in the Instant Pot – and I’ll show you how to make it lighter without losing flavor.

Lamb Rogan Josh is one of those dishes I never get tired of. Slow-cooked lamb, soft onions, garlic, ginger and a whole chorus of spices simmer down into this gorgeous brick-red sauce that clings to every bite. It’s cozy, it’s bold, it smells like you’ve had something bubbling on the stove all afternoon (because… you have), and you honestly won’t believe how easy it is to pull off at home.
What Is Rogan Josh?
Rogan Josh (sometimes written rogan gosht) is a Kashmiri curry made with lamb, goat or mutton. The name is usually traced back to Persian – rogan means oil or clarified butter and josh means heat or intensity – which describes how the meat is slowly cooked in fat and spices. It’s known for that signature deep red color, which traditionally comes from mild Kashmiri chilies rather than blow-your-head-off heat. In fact, it’s usually mild to medium in spice level, which makes it super family friendly.
Traditional Kashmiri Pandit versions skip onions, garlic and tomatoes altogether and leans on ground fennel, dried ginger and yogurt. Most modern and restaurant-style recipes add tomatoes for body and sweetness – and so does mine. It keeps the warming aromatics and the yogurt finish, but it’s streamlined for home cooks and lightened up with lean lamb and minimal fat. It’s comfort food meets weeknight practicality.

Here’s What You’ll Need
Take a look at the list of ingredients – you’ll find all my swaps for a lighter version in one place further down. You will need a heavy casserole dish with a lid for this recipe.
- Lamb: Lamb shoulder or neck gives you that melting tenderness, but you can also use lean lamb leg steaks for a lighter version. Leftover roast lamb and lamb shanks work too – see the FAQs.
- Onion, garlic, ginger: The flavor base which absorbs all the wonderful spice aromas.
- Kashmiri chili powder: This is what gives rogan josh its vivid red color with only gentle heat. If you can’t find it, use regular mild chili powder – the sweet paprika will still give you plenty of color.
- Spice blend: Garam masala, sweet paprika, turmeric, ground fennel, ground cloves, cardamom pods, bay leaf and a cinnamon stick. Fennel is a signature flavor of Kashmiri cooking and adds a gentle sweetness, while clove, cardamom and cinnamon add that deep, rounded perfume.
- Tomatoes: Tomato paste (purée) builds umami and body, and canned chopped tomatoes (or fresh diced tomatoes) create that rich red gravy.
- Stock: Chicken or lamb stock adds extra flavor as the lamb cooks low and slow. Canned tomatoes release plenty of liquid too, so you don’t need much – add a splash more only if the sauce starts to catch.
- Yogurt: Stirred in at the end, off the heat, to soften the acidity of the tomatoes and round out the sauce. Room-temperature yogurt is less likely to split.
- Fresh cilantro (coriander) and tomatoes to serve: A sprinkle of herbs and sliced tomatoes at the end gives brightness and that “Indian restaurant rogan josh” look.

How to Make Lamb Rogan Josh
- Cook the onions. Heat the oil or ghee (or mist your casserole with cooking spray) and gently cook the onions over low heat until softened but not colored, 5–7 minutes. If you are making the lighter version, add a splash of stock so the onions don’t stick.
- Stir in the spices, salt, bay leaf, minced garlic and grated ginger. Cook for about 2 minutes until their wonderful aroma is released.
- Add the lamb and stir to coat in the spices. In most traditional recipes the meat is browned first – I skip it to keep things easy, but see my tip below if you have a few extra minutes.
- Add the tomato paste, chopped tomatoes and stock. Stir to combine and bring to a rolling simmer. Reduce the heat, cover the pot and gently cook for 60–90 minutes, stirring occasionally, until the lamb is perfectly tender. If the sauce still looks thin, take the lid off for the last 10–15 minutes.
- Stir in the yogurt off the heat, a spoonful at a time, until it blends into the sauce. Remove the cinnamon stick and bay leaf (and the cardamom pods if you can find them). Check the seasoning, adding salt and pepper as needed.

Before cooking the onions, sear the lamb in batches over high heat until browned on all sides, then set it aside and return it to the pot in step 3. The browned bits on the bottom of the pan give the sauce a deeper, richer flavor.
Slow Cooker and Instant Pot Instructions
Rogan josh is made for hands-off cooking. Both methods use less stock than the stovetop version because there’s hardly any evaporation – you’ll find full instructions in the recipe card.
Slow Cooker Method
Cook the onions, spices, garlic and ginger in a pan – or directly in the inner pot of your slow cooker if it can go on the stovetop (less washing up!). Add the lamb, tomato paste, chopped tomatoes and 1 cup (250ml) of stock and bring to a simmer. Transfer to the slow cooker and cook on low for 8 hours or high for 6. Stir in the yogurt at the very end, just before serving. Lamb shanks are fantastic cooked this way – allow one per person.
Instant Pot Method
Use the Sauté function to soften the onions and toast the spices, then add the lamb and 1 cup (250ml) of stock. Layer the chopped tomatoes on top without stirring – this helps prevent a burn warning. Cook on high pressure for 20 minutes and let the pressure release naturally. If the sauce is thin, reduce it on Sauté for a few minutes, then switch the Instant Pot off and stir in the yogurt.
How to Make a Lighter Version
This curry is already fairly light, but if you’re following a slimming plan these swaps make a big difference:
- Use lean lamb leg steaks and trim off all visible fat.
- Swap the ghee or oil for low-calorie cooking spray, adding a splash of stock if the onions start to stick.
- Use 0% fat Greek or natural yogurt, stirred in off the heat.
- Serve with plain basmati rice or cauliflower rice and plenty of kachumber instead of naan.
Serving Suggestions
This thick lamb curry is frequently served with sliced fresh tomatoes in Indian restaurants, so feel free to add some if you like! Pair with pilau rice or plain basmati rice with some extra yogurt, and naan bread or my easy yogurt flatbreads on the side to mop up the delicious sauce.
I like to add a little kachumber, which is a sort of Indian salsa made with onion, tomatoes, cucumber, cilantro (coriander), chili and lime juice. It brings a wonderful freshness that cuts through the rich sauce – highly recommended!
A glass of ice-cold beer or a chilled white wine with some acidity, like a dry Riesling or Sauvignon Blanc, is an excellent pairing with this aromatic lamb curry.

Storage and Freezing
Rogan josh keeps well in the fridge for up to 3 days – the sauce tastes even better the next day. To freeze, leave out the yogurt, cool the curry completely, portion into freezer-safe containers and freeze for up to 3 months. Thaw overnight in the fridge, reheat until piping hot, then stir in the yogurt off the heat before serving.

Ingredients
- 2 tbsp ghee (or vegetable oil or low calorie spray for slimming version)
- 2 large onions (, finely diced)
- 1 tsp salt
- 1 tsp garam masala
- 1 tsp Kashmiri chili powder (or mild chili powder)
- 1 tsp sweet paprika
- 1 tsp ground fennel
- ½ tsp turmeric
- ⅛ tsp ground cloves
- 5 pods cardamom (, lightly crushed)
- 1 bay leaf
- 1 small cinnamon stick
- 3 cloves garlic (, minced)
- 1 tbsp freshly grated ginger
- 2 lbs (900g) diced lamb (visible fat removed)
- 2 tbsp tomato paste ((purée))
- 14 oz (400g) canned tomatoes (replace with fresh diced tomatoes if preferred)
- 2 cups (500ml) low sodium chicken stock (Use 1 cup (250ml) in slow cooker & instant pot)
- 5 tbsp natural yogurt (0% fat for a slimming version)
- 2 tbsp fresh cilantro (coriander) (to garnish)

- 3 medium fresh tomatoes (, sliced to serve (optional))
Kachumber
- 1 small red onion
- ½ cucumber (, seeds removed)
- 4 cherry tomatoes (, seeded and finely diced)
- 1 red chilli (, seeded and finely diced)
- 2 tbsp fresh coriander ((cilantro), finely chopped)
- 1 tbsp lime juice (, or to taste)
- salt and pepper (to season)
Method

Heat the ghee or oil in a large lidded casserole dish (or mist with olive oil spray). Gently cook the onions over low heat until softened but not colored, 5-7 minutes. If you are making a slimming version you might need to add a splash of stock so the onions don’t stick.

Stir in the salt, spices, cardamom pods, bay leaf, cinnamon stick, minced garlic and grated ginger. Cook for 2 minutes until aromatic.

Add the diced lamb and stir to coat in the spices. Stir in the tomato purée and chopped tomatoes.

Add the stock or water and bring to a rolling simmer. Reduce the heat, cover the pot and gently cook for 60-90 minutes, stirring occasionally, until the sauce has thickened and the lamb is perfectly tender.

Take the pot off the heat and stir in the yogurt, a spoonful at a time, until it blends into the sauce. Remove the cinnamon stick and bay leaf (and the cardamom pods if you are able to find them).

Check the seasoning, adding salt and pepper as needed. Add a pinch of dried chillies for a bit of gentle heat.

Add the sliced fresh tomatoes and garnish with plenty of chopped coriander.

Mix all the ingredients for the kachumber together in a small bowl.

Serve the Rogan Josh with rice, the kachumber, some extra yogurt and naan or flatbread on the side to mop up the delicious sauce.
Instant Pot Method

Select Saute/Less and heat the ghee or oil. Cook the onions for 5 minutes until softened, stirring.

Add salt, spices, cardamom pods, bay leaf, cinnamon stick, minced garlic and grated ginger. Cook for 2 minutes until aromatic. Stir the tomato paste in.

Add the lamb and 250ml (1 cup) of stock and stir well to combine.

Add the chopped tomatoes, do not stir.

Cover the pot, set vent to sealing and cook on HIGH PRESSURE for 20 minutes.

When cooking is done allow the pressure to release naturally. Stir to combine and if the sauce is a little on the watery side you can reduce it on Saute/high.

Switch off the Instant Pot and stir in the yogurt until it blends into the sauce (adding it after cooking stops it from curdling). Check the seasoning and serve.
Slow Cooker Method

Heat the ghee or oil in a large lidded casserole dish or directly in the inner pot of your slow cooker IF IT ALLOWS FOR SEARING. Gently cook the onions over low heat until softened but not colored, 5-7 minutes. If you are making a slimming version you might need to add a splash of stock so the onions don’t stick.

Stir in the salt, spices, cardamom pods, bay leaf, cinnamon stick, minced garlic, fennel and grated ginger. Cook for 2 minutes until aromatic. Add the lamb and stir to coat in the spices.

Stir in the tomato purée and chopped tomatoes. Add 250ml (1 cup) of hot stock and stir well to combine. Bring to a simmer.

Transfer to your slow cooker, cover and cook on low for 8 hours or high for 6.

Open the lid and stir the curry. If it is still a little watery, continue to cook on high with the lid off for a little longer.

Questions
Is lamb rogan josh spicy?
Not very – rogan josh is usually mild to medium. Its red color comes from Kashmiri chili powder and paprika, which bring more color than heat. For more of a kick, add a pinch of red pepper flakes or a fresh green chili at the end.
Does rogan josh have tomatoes?
Traditional Kashmiri versions don’t – the color and body come from Kashmiri chilies and yogurt. Most modern and restaurant-style recipes, including mine, add tomatoes for a richer, thicker sauce.
What’s the difference between rogan josh and other lamb curries?
Rogan josh is all about its deep red color and aromatic rather than fiery spicing – Kashmiri chili, fennel, ginger, cardamom and cloves – finished with yogurt. It’s milder than a vindaloo or madras and less creamy than a korma (try my Instant Pot Lamb Korma to compare).
Can I use leftover roast lamb?
Yes! Make the sauce as written but simmer it for just 20–30 minutes until thickened, then add the diced cooked lamb at the very end, only long enough to heat through, so it doesn’t dry out.
Can I use lamb shanks instead of diced lamb?
Yes – allow at least one shank per person, as they carry a lot of fat and bone and not much meat. Cook them low and slow, ideally in the slow cooker, until the meat falls off the bone. My Braised Lamb Shanks have more tips.
Can I make rogan josh with chicken or beef?
Yes. For chicken, use boneless thighs and cut the simmering time to 25–30 minutes – or follow my Easy Chicken Rogan Josh. Beef chuck (braising steak) needs a similar cooking time to lamb, and pork shoulder works too.
Can I make it in the slow cooker or Instant Pot?
Yes – see the section above and the recipe card for full instructions. Stir in the yogurt at the very end, once cooking is complete, so it doesn’t curdle.
